RHÔNE
Wine Dinner
Canapé
2023 Lolita Sene ‘Kiffe Kiffe’ VdF Sauvignon Blanc
Very small production, with everything done by hand—winemaking at its most unadulterated. The grapes are organically grown on clay soils in Saint‑Victor‑la‑Coste in the Gard, beside Lirac and Tavel and just across the river from Châteauneuf‑du‑Pape. Harvesting is done by hand to ensure the quality of each bunch. Half the fruit is gently pressed directly, while the other half macerates as whole clusters for a week, adding texture and perceptible tannin. Unfined, unfiltered, and made without added sulphites, the wine is strikingly open aromatically: floral, citrusy, with a touch of peach—an ideal apéro. Lolita farms just 0.97 hectares planted to Clairette, Syrah, Grenache, Chardonnay, and—surprisingly—Sauvignon Blanc.

Soup au Pistou
2024 Domaine La Lôyane, Tavel (Cinsault, Clairette Rose, Grenache)
From 50-year-old vines grown on clay-siliceous soils with rounded pebbles, this vibrant rosé shows lovely freshness and nicely rounded fruit. Vinified in stainless steel tanks and made using the saignée method, it develops a deeper hue—almost presenting as a light red. A classic pairing for this Provençal dish.

Trio de Farcis Niçois
2021 Aymeric Paillard ‘Petit Père’ St Joseph, Syrah 2oz (replacing Andrea Calek ‘babiole’)
From Aymeric Paillard, son of legendary Champagne producer Bruno Paillard. After working under Stéphane Ogier in Côte‑Rôtie, Aymeric set out to find his own voice in the winemaking world. He purchased 3.7 hectares of abandoned vines in Saint‑Joseph, carefully nursing them back to health. His approach is low‑intervention, with organic farming and only small additions of sulphur. This Syrah is marked by its buoyancy—a fair amount of extraction balanced by a classic vintage and stem inclusion that preserves freshness. Lightly savoury, it pairs beautifully with the roasted aubergine.

Bouillabaisse
2023 Domaine Malmont, Séguret Côtes du Rhône Villages Petit Blanc 2oz (replacing the Montirius)
A blend of Marsanne, Roussanne, and Viognier, all hand‑harvested and farmed biodynamically. This is a weightier, waxier “winter white” with the structure to stand up to tomato‑based dishes. Notes of raw honey, lees, citrus rind, and white flowers lead to a finish that beautifully illustrates the balance between richness and freshness.

Daube Avignonnaise
2007 Château de Beaucastel vs. 2015 Vieux Télégraphe ‘La Crau’, Châteauneuf-du-Pape
Two iconic houses, both alike in dignity. The 2007 shows more tertiary character—when Grenache develops distinctive herbaceous, plant-like aromatics—while Vieux Télégraphe maintains more of its cherry fruit, spiced oak, and kirsch notes. Don’t underestimate the younger of the two: 2015 is a vintage that Vieux Télégraphe vigneron Daniel Brunier describes as “a superb vintage that once again proves that nothing great can be done hurriedly.” The estate prolonged the élevage of this wine to help soften its muscular tannins.
