A Sommelier-Curated Experience at Auberge du Pommier
On Thursday, September 17 at 6pm, join us in Sophie Room, one of Auberge du Pommier’s elegant private dining rooms, for an evening celebrating the exceptional wines of Champagne Collet, a grower-led house with more than 100 years of history in the Grand Cru village of Aÿ. Established in 1921 as Champagne’s oldest cooperative, Collet is committed to showcasing the breadth and diversity of the region, offering a distinctive expression of one of the world’s most celebrated wine regions.
We are pleased to welcome Carl Cercellier of Champagne Collet, who will lead the evening’s tasting and share insight into the winery’s distinctive vision and practices. From single-vintage, mineral-focused expressions to richer, more opulent styles, each cuvée will be thoughtfully paired with a five-course tasting menu crafted by Chef Kane Van Ee, offering a considered exploration of the character and versatility of Champagne.
